Instructions:
- 
Prepare the Sausage: - In a 12-inch skillet over medium heat, cook the sweet Italian sausage links.
- Add ¼ cup water to the skillet and bring to a boil.
- Cover the skillet and cook the sausages for 5 minutes.
- Remove the cover and continue cooking until the sausages are well browned, about 20 minutes. Turn the sausages frequently and prick them to release fat.
- With a slotted spoon, remove the sausages to paper towels to drain.
- Cut the sausages into 1-inch chunks and place them in a 4-quart casserole dish.
 
- 
Preheat the Oven: - Preheat your oven to 375 degrees Fahrenheit.
 
- 
Cook the Vegetables: - In the drippings remaining in the skillet over medium heat, cook the celery, onion, and green pepper until the vegetables are tender, stirring occasionally.
- With a slotted spoon, remove the vegetables to the casserole dish with the sausages.
 
- 
Prepare the Rice Mixture: - Add the can of tomatoes with their liquid, long grain rice, salt, ground red pepper, and 2 cups of water to the casserole dish.
- Cover the dish and bake for 35 minutes, stirring frequently.

Prepare the Shrimp and Peas: - Meanwhile, shell and devein the shrimp.
- After the rice has baked for 35 minutes, tuck some shrimp into the rice mixture and arrange peas and some shrimp on top of the casserole.
- Cover the dish and continue baking for 10 minutes or until the shrimp turns pink, the rice is tender, and all the liquid is absorbed.

Serve: - Once cooked, remove the Shrimp Creole from the oven and let it cool slightly.
- Serve hot, garnished with fresh herbs if desired.
