  • 1 cup milk
  • 1 egg

Instructions

Step Description
1 Heat olive oil in a 3-quart saucepan over medium-high heat.
2 Add chopped onion, diced bell pepper, and minced garlic to the saucepan. Cook, stirring frequently, until the vegetables are tender.
3 Stir in water, dried lentils, tomato sauce, and seasoning mix. Reduce heat to low, partially cover, and simmer for 35 to 40 minutes, or until the lentils are tender.
4 Preheat the oven to 400°F (200°C).
5 Grease a 2-quart casserole dish with shortening.
6 In a mixing bowl, combine shredded cheddar cheese, milk, and egg to prepare the Cheese Cornbread Topping. Mix until moistened.
7 Spoon the lentil mixture into the greased casserole dish.
8 Spread the cheese cornbread topping evenly over the lentil mixture.
9 Bake uncovered in the preheated oven for 15 to 20 minutes, or until the topping is golden brown.
