French Dip-Crock Pot Recipe

Description: A really nice fireside supper for friends. Taste the Aus Jus first to make sure it’s really “beefy” and add another bouillon packet if needed. If “heat bothers you,” start with 1 teaspoon of black pepper.

Ingredients

1 Rump roast
1 Garlic
1 Black pepper
4 Bouillon
2 Beef broth
2 Onions
1 1/2 Flour
Garlic salt
Water
Cornstarch

Instructions

  1. Prepare the Roast:

    • Coat the rump roast in flour and garlic salt.
    • Braise the roast on all sides in a pan prior to placing it in the crock pot.
  2. Crock Pot Assembly:

    • Place the prepared roast in the crock pot.
    • Add garlic, black pepper, bouillon, beef broth, and onions to the crock pot.
  3. Cooking:

    • Cook on High for 5-6 hours or Low for 8-10 hours until the meat is tender.
  4. Prepare the Aus Jus:

    • Remove the meat from the crock pot and place it on a deep plate to collect juices.
    • Strain the broth well so that it is clear and no spices or onions remain.
    • Add a few cups of water to create aus jus.
    • Place in a saucepan and keep warm.
  5. Thickening the Broth (Optional):

    • Most people prefer to keep the broth as is, but you can stir in a small amount of cornstarch mixed with cold water to thicken it up just a touch.
  6. Heat Hoagie Buns:

    • Heat the hoagie buns to warm.
  7. Slice the Meat:

    • Slice the cooked meat thinly.
  8. Assembly:

    • Place a good amount of sliced meat in each of the hoagie buns.
    • Offer the Aus Jus in individual ramekins for dipping.
