Instructions:

  1. Prepare Rhubarb Juice:

    • Cook the rhubarb over medium heat for 10-12 minutes, or until soft.
    • Drain the cooked rhubarb through a sieve lined with cheesecloth to extract the juice. You should have approximately 3 quarts of juice.
  2. Optional Step for Make-Ahead:

    • If you’re preparing the punch ahead of time, the rhubarb juice can be frozen in ziplock bags for up to 3 months.
  3. Prepare Sugar Syrup:

    • In a separate saucepan, dissolve the sugar in 2 cups of water.
    • Cook the sugar mixture over medium heat for 10 minutes or until a syrup forms.
  4. Combine Juices:

    • In a large punch bowl, combine the lemon juice, pineapple juice, and the prepared rhubarb juice with the sugar syrup.
  5. Freeze Fruit Cubes:

    • Pour 1 quart of the prepared punch into ice cube trays and freeze until solid, which typically takes a couple of days.
    • Once frozen, remove the fruit cubes from the trays and transfer them to ziplock bags. Store them in the freezer until serving time.
  6. Assemble the Punch:

    • Prior to serving, place the fruit cubes in the punch bowl.
    • Slowly pour in the remaining quart of ginger ale over the fruit cubes to add effervescence to the punch.
