Instructions:

Step Description
1 Preheat your oven to 350Β°F. Spray a 13×9 baking dish with non-stick cooking spray. In a bowl, whisk together the soup and 1/2 to 2/3 of the soup can of water until smooth.
2 Stir in the green chili salsa, 1/4 cup of chopped cilantro, and half of the chopped onion into the soup mixture. In a separate large bowl, mix together the pinto beans, black beans, 1 cup of cheese, and 1 cup of the prepared sauce.
3 Wrap the tortillas in dampened paper towels and microwave on high for 2 to 3 minutes, or until they are hot and pliable. Keep them wrapped until you’re ready to use them.
4 Working with one warm tortilla at a time, spoon about 1/3 cup of the bean mixture down the center of each tortilla, then roll them up and place them seam side down in the prepared baking dish. If you’re not baking them immediately, cover the enchiladas with fresh damp paper towels, then tightly cover the dish with foil and refrigerate for up to two days.
5 Once ready to bake, pour the remaining sauce over the top of the enchiladas in the baking dish. Loosely cover the dish with foil and bake for 30 minutes. Then, uncover the dish, sprinkle the remaining cheese over the top of the enchiladas, and bake for an additional 20 minutes, or until the sauce is bubbling around the edges and the cheese has melted.

Serving:
