  • 2 tbsp butter
  • 1 onion
  • 2 cloves garlic
  • 10 oz couscous
  • 2 cups chicken broth
  • 1 tbsp butter

  • 2 cups shredded Muenster cheese
  • 3/4 – 1 cup spinach

Recipe Instructions:

Step Instructions
1 Melt 2 tbsp of butter in a pan over medium heat. Add finely chopped onion and sauté until translucent, then add minced garlic and cook for about 1 minute. Remove from heat.
2 In a separate saucepan, bring 2 cups of chicken broth to a boil along with 1 tbsp of butter.
3 Once the broth is boiling, add the couscous to the saucepan. Cover and remove from heat. Let it sit for 5 minutes to allow the couscous to absorb the liquid.
4 After 5 minutes, add the cooked couscous to the pan with onions and garlic. Stir in diced tomatoes, mixing well.
5 Preheat your oven to 375°F (190°C). Spray a baking dish with non-stick cooking spray.
6 Layer 1/3 of the couscous mixture at the bottom of the baking dish. Top with half of the spinach and 1/3 of the shredded cheese. Repeat the layers once more, using another 1/3 of the couscous, the remaining spinach, and 1/3 of the cheese. The final layer should consist of the remaining couscous and cheese.
7 Bake the assembled dish in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
8 Once baked, remove from the oven and let it cool slightly before serving. Enjoy your Carrie’s Couscous straight from the oven!
