Ingredients:

  • 1 egg
  • 1 package cream cheese
  • 1 package creamy peanut butter
  • 1/4 cup granulated sugar
  • 1 pinch salt
  • 2 1/2 cups cookie mix
  • 1/2 cup shortening
  • 2 egg yolks
  • Mini chocolate chips (optional)

Instructions:

  1. Preheat oven: Preheat your oven to 375°F (190°C).
  2. Prepare dough: In a large bowl, combine the cookie mix, contents of peanut butter packet from the mix, and whole egg. Stir until thoroughly blended.
  3. Shape dough: Shape the dough into 36 balls, each about 1 inch in diameter. Place them 2 inches apart onto ungreased cookie sheets.
  4. Create indentations: Gently press your thumb in the center of each cookie to create an indentation.
  5. Prepare filling: In a medium bowl, combine cream cheese, peanut butter, egg yolks, granulated sugar, and salt. Beat at medium speed with an electric mixer until blended. Stir in mini chocolate chips if desired.
  6. Fill cookies: Fill the center of each cookie with a rounded teaspoonful of the filling mixture.
  7. Bake: Bake the cookies for 8-10 minutes or until they are light golden brown.
  8. Cool: Allow the cookies to cool for 2 minutes on the cookie sheets, then transfer them to cooling racks to cool completely.
