Ingredients:
- 1 egg
- 1 package cream cheese
- 1 package creamy peanut butter
- 1/4 cup granulated sugar
- 1 pinch salt
- 2 1/2 cups cookie mix
- 1/2 cup shortening
- 2 egg yolks
- Mini chocolate chips (optional)
Instructions:
- Preheat oven: Preheat your oven to 375°F (190°C).
- Prepare dough: In a large bowl, combine the cookie mix, contents of peanut butter packet from the mix, and whole egg. Stir until thoroughly blended.
- Shape dough: Shape the dough into 36 balls, each about 1 inch in diameter. Place them 2 inches apart onto ungreased cookie sheets.
- Create indentations: Gently press your thumb in the center of each cookie to create an indentation.
- Prepare filling: In a medium bowl, combine cream cheese, peanut butter, egg yolks, granulated sugar, and salt. Beat at medium speed with an electric mixer until blended. Stir in mini chocolate chips if desired.
- Fill cookies: Fill the center of each cookie with a rounded teaspoonful of the filling mixture.
- Bake: Bake the cookies for 8-10 minutes or until they are light golden brown.
- Cool: Allow the cookies to cool for 2 minutes on the cookie sheets, then transfer them to cooling racks to cool completely.
- Prepare chocolate drizzle: Place chocolate chips and shortening in a small resealable plastic bag. Seal the bag and place it in a bowl of hot water for several minutes until the contents are melted and smooth. Dry the bag with a towel, then knead it until the contents are blended.
- Drizzle: Snip a tiny hole in one corner of the bag (or use a toothpick to make a small hole). Drizzle the melted chocolate over the cookies.
- Set: Allow the chocolate drizzle to set before storing the cookies between layers of waxed paper.
Note:
- For a quicker drizzle, you can microwave the chocolate instead of using the hot water method.
