Description:

This Mandarin-Almond Cake recipe is a delightful twist on a traditional Middle-Eastern cake. Moist, rich, and bursting with citrusy goodness, it’s the perfect dessert for any occasion. And guess what? The absence of flour is intentional, giving it a unique texture and flavor that will have everyone coming back for seconds!

Ingredients:

  • 4 eggs
  • 3 mandarin oranges
  • 1 1/8 – 1 1/4 tsp baking powder
  • 1 cup sugar
  • 3/4 cup almonds (ground)

Instructions:

  1. Prepare Mandarin Puree:

    • Place mandarins in a saucepan, cover with water, and bring to a boil. Allow to simmer for 1 hour.
    • Let the mandarins cool down.
    • Cut mandarins open on a plate, remove the pips, and place the pulp and skins into a blender.
    • Process until smooth. You should have just over a cup of pulp.
  2. Preheat Oven:

    • Preheat your oven to 375Β°F (190Β°C). Grease and flour an 8-inch cake pan.
  3. Mix Wet Ingredients:

    • In a mixing bowl, beat eggs and sugar together until thick and fluffy.
  4. Incorporate Mandarin Puree and Almonds:

    • Add the mandarin puree, ground almonds, and baking powder to the egg mixture.
    • Mix well until all ingredients are fully incorporated.
  5. Bake the Cake:

    • Pour the batter into the prepared cake pan.
  6. Bake:

    • Place the cake pan in the preheated oven and bake for about 1 hour, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
  7. Cool and Serve:

    • Once baked, remove the cake from the oven and allow it to cool in the pan for a few minutes.
    • Transfer the cake to a wire rack to cool completely.
    • The cake may slightly fall in the center, which is normal.
  8. Enjoy!

    • Slice and serve this delicious Mandarin-Almond Cake on its own or with a dollop of whipped cream or a scoop of vanilla ice cream for an extra treat!
