Ingredients:

  • 2 chipotle chiles
  • 6 button mushrooms
  • 4 onions
  • 1 garlic clove
  • 2 tablespoons olive oil
  • Salt, to taste
  • Fresh coriander for garnish

Instructions:

Step Description
1 Soak the dried chipotle chiles in a bowl of hot water for about 10 minutes until they are softened.
2 Drain the chiles, cut off the stalks, then slit them open and scrape out the seeds.
3 Finely chop the flesh of the chipotle chiles.
4 Trim the mushrooms, then clean them with a damp cloth or kitchen paper. If they are large, cut them in half.
5 Heat the olive oil in a large frying pan over medium heat.
6 Add the onions, garlic, chopped chipotle chiles, and mushrooms to the pan, stirring until evenly coated in the oil.
7 Fry for 6 to 8 minutes, stirring occasionally, until the onions and mushrooms are tender.
8 Season the mushrooms with salt to taste.
9 Spoon the cooked mushrooms into a serving dish.
10 Chop some of the fresh coriander, leaving some whole leaves for garnish. Sprinkle the chopped coriander over the mushrooms.
11 Serve the mushrooms hot and garnish with the remaining whole coriander leaves.
