- 2 salmon fillets
- 0.5 shallot, coarsely chopped
- 1-2 tablespoons extra virgin olive oil
- 1/4 cup butter
- 1 1/2 – 2 1/2 cups milk
- 1/4 cup dry white wine
- 1/4 cup flour
- 1/2 tablespoon cornstarch
- 1/4 cup chopped crab meat
- Old Bay Seasoning, to taste

- Drain the chopped crab meat and also set it aside.

- Heat a large pan over medium heat and add the olive oil and butter. Make sure not to burn the liquid.
- Clarify the coarsely chopped shallot by cooking it until translucent. Remove it from the pan and set it aside.
- In the same pan, add the coarsely chopped crab meat and fast-fry it until slightly browned. Remove it from the pan and set it aside.

- Place the salmon fillets, skin side down, into the pan and cover. Let them cook for about 10 minutes or until the flesh turns pink.
- Carefully flip the fillets over and cook for an additional 5 minutes or until the topside is nicely browned.
- Remove the salmon fillets from the pan, place them on a plate (skin side up), and keep them warm. Carefully peel back and discard the skin.
