Ingredients:

  • 2 tablespoons bacon fat
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 chorizo sausages, crumbled
  • 1 can (14.5 oz) beef broth
  • 1 can (14.5 oz) chicken broth
  • 1 can (15 oz) garbanzo beans, drained and rinsed
  • 2 potatoes, diced
  • 1-2 bay leaves
  • Pinch of saffron threads

Instructions:

Step Description
1. In a medium stock pot, heat bacon grease over medium heat.
2. Add chopped onion and minced garlic to the pot, cooking until soft but not browned.
3. Crumble the chorizo sausages into the pot, stirring occasionally until well cooked.
4. Drain any excess grease from the pot, then return it to the heat.
5. Pour in both cans of broth, followed by the drained garbanzo beans, diced potatoes, bay leaves, and saffron threads.
6. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for 30 minutes.
