Description: Here’s an all-in-one supper dish that’s quick to put together and colourful to serve. I got it out of a UK cooking magazine and for a special presentation, they recommend garnishing along the edges with wedges of cucumber and lime. You can substitute about 200g of shrimp for the chicken, if you like.

2 Cloves of garlic
3 Skinless chicken breasts
1 Bunch of spring onions
3 Handfuls of snow peas
150g Mange-tout peas
2 Eggs
2 tbsp Lime juice
2 tbsp Fish sauce
2 Red chilies
1 Handful of cashews
4 sprigs Fresh coriander

Instructions:

  1. Prepare Noodles: Begin by covering the rice noodles with boiling water in a bowl, allowing them to soften for 3-4 minutes. Once softened, drain them thoroughly and set aside.

  2. Cook Chicken: Heat oil in a large pan over medium heat. Add finely chopped garlic and sliced chicken breast to the pan, stirring occasionally. Cook for approximately two minutes or until the chicken is nearly cooked through.

  3. Add Vegetables: Incorporate chopped spring onions and snow peas into the pan with the chicken. Sauté for an additional 30 seconds, allowing the vegetables to slightly soften.

  4. Stir in Noodles: Add the drained rice noodles to the pan, stirring to combine with the chicken and vegetables. Allow them to cook together for about a minute, ensuring the noodles are evenly coated.

  5. Add Eggs: Create a well in the center of the pan and crack the eggs into it. Lightly scramble the eggs for about 20 seconds until they are nearly cooked, then fold them together with the noodles and other ingredients.

  6. Season and Finish: Pour lime juice and fish sauce over the noodle mixture, stirring well to incorporate the flavors. Remove the pan from heat and divide the mixture between two serving bowls.

  7. Garnish: Sprinkle chopped red chilies, cashews, and freshly chopped coriander over each serving for added flavor and presentation.
