- 1 cup dry pinto beans
- Water (for soaking and cooking)
- 1 onion (small), chopped
- 2 garlic cloves, sliced
- 1 onion (large), chopped
- 4 fresh tomatoes, chopped
- 2 chili peppers, chopped
- Salt, to taste
Instructions:
-
Prepare the Beans:
- Let the dry pinto beans soak overnight in plenty of water to soften them.
-
Cook the Beans:
- In a large pot, combine the soaked beans, chopped small onion, sliced garlic cloves, and enough water to cover everything.
- Bring to a boil and cook until the beans are just opened and soft, approximately 1 1/2 to 2 hours. Keep an eye on the water level and add more if needed.
-
Prepare the Meat Mixture:
- In a large pan, fry the chorizo for about 8 minutes until it’s nicely browned.
-
Sauté the Vegetables:
- Add the chopped large onion and the 4 chopped tomatoes to the pan with the chorizo.
- Cook for a few minutes until the vegetables start to soften.
-
Add Spices:
- Mix in the chopped chili peppers and salt to taste, allowing the flavors to meld together until the mixture is well done.
-
Combine and Simmer:
- Once the meat mixture is ready, mix it with the cooked beans in a large covered pot.
- Add about 1 cup of water (more if you prefer a thinner consistency) and simmer for an hour or more to let the flavors blend beautifully.
