  • 1 tablespoon butter

  • 1/2 teaspoon black pepper
  • 1 (12 oz) can 2% evaporated milk
  • 1/2 tablespoon cornstarch

Instructions:

Step Description
1 In a bowl, combine breadcrumbs, parmesan cheese, and butter. Set aside for later.
2 Heat oil in a large saucepan over medium heat. Add chopped onions and cook for about 2 minutes or until softened.
3 Add diced chicken to the saucepan and cook for 5 minutes or until lightly browned.
4 Mix in diced potatoes, mixed vegetables, salt, dried thyme, and black pepper. Cook for 10 minutes, stirring occasionally.
5 In a separate bowl, stir together evaporated milk and cornstarch until well combined.
6 Pour the milk mixture into the saucepan with the vegetables and chicken. Bring to a boil, stirring continuously.
7 Reduce the heat to medium-low, cover, and cook for an additional 10 minutes, or until the vegetables are tender and the sauce has thickened, stirring often.
8 Transfer the stew into an 8-inch baking dish. Sprinkle the breadcrumb mixture over the top.
9 Broil the stew for 5 minutes, or until the breadcrumb topping is golden brown.
