Scotch Shortbread Recipe

Description: The ALWAYS requested cookie at my house for the holidays. I cannot remember where I got the original recipe from, but I have been making them for over 20 years.

Ingredients:

Quantity Ingredient
1 cup Butter
3/4 cup Sugar
2 3/4 cups Flour

Instructions:

  1. Cream Butter: In a mixing bowl, cream butter until soft, gradually adding sugar, and continue creaming until fluffy.

  2. Mix Flour: Mix in flour and beat until crumbly.

  3. Prepare Pan: Turn the mixture into an ungreased 13×9 pan.

  4. Press Dough: Press the dough gently with fingers into an even and firm layer.

  5. Prick Dough: Prick the dough evenly with a fork. You may wish to sprinkle the top with a little additional sugar for added sweetness.

  6. Bake: Preheat the oven to 325 degrees Fahrenheit (165 degrees Celsius). Bake the shortbread for 35-40 minutes until LIGHTLY browned.

  7. Cool and Cut: Let the shortbread cool for 5 minutes before cutting into “finger” shaped cookies.
