Ingredients:

  • 8 flour tortillas
  • 2 cups Monterey Jack pepper cheese, shredded
  • 1 tomato, diced
  • 1/2 cup bacon, cooked and crumbled
  • 1 cup baby shrimp, cooked

Instructions:

Step Description
1 Heat a 10-inch non-stick skillet over medium-high heat.
2 Place one tortilla in the skillet and sprinkle with 1/4 cup of shredded cheese, followed by 1/4 of the diced tomatoes, cooked bacon, and baby shrimp.
3 Sprinkle an additional 1/4 cup of shredded cheese over the toppings.
4 Top with another tortilla to form a quesadilla.
5 Cook for 1-2 minutes or until the bottom is golden brown; then, carefully flip the quesadilla and cook for an additional 1-2 minutes or until the other side is golden brown.
6 Repeat the process three more times to make a total of four quesadillas.
7 Once cooked, cut each quesadilla into wedges.
8 To keep the quesadillas warm, place them on an ungreased cookie sheet in the oven.
