Description:

Ingredients:

  • 1 cup butter
  • 1/4 cup margarine
  • 1 cup sugar
  • 2/3 cup all-purpose flour
  • 1 package chocolate sandwich cookies
  • 2 cups semi-sweet chocolate chips
  • 2 packages cream cheese
  • 2 large eggs
  • 2 tablespoons sweet marsala wine
  • 1 tablespoon sweet sherry
  • 1 teaspoon vanilla extract

Instructions:

Step Description
1 In a food processor or blender, crush the chocolate sandwich cookies until they form fine crumbs.
2 Transfer the cookie crumbs to a 9-inch springform pan.
3 Add melted butter to the crumbs and mix thoroughly. Press the mixture evenly over the bottom and about 1 inch up the sides of the pan. Set aside.
4 Using the food processor or blender, grind half of the chocolate chips until they reach a fine consistency.
5 In a separate bowl or the bowl of an electric mixer, combine the ground chocolate, sugar, and flour. Mix well.
6 Add the cream cheese, eggs, sweet marsala wine, sweet sherry, and vanilla extract to the mixture. Blend until smooth and creamy.
7 Scatter half of the remaining chocolate chips over the prepared crust. Pour the cheesecake batter into the pan, spreading it evenly.
8 Sprinkle the remaining chocolate chips over the top of the batter.
9 Bake the cheesecake in a preheated oven at 300Β°F (150Β°C) for 1 1/4 to 1 1/2 hours, or until the cake jiggles slightly in the center when shaken.
10 Allow the cheesecake to cool, then cover and refrigerate for at least 4 hours or up to 2 days to set.
11 Once chilled, remove the rim of the springform pan and serve the cheesecake to delight your guests.
