Ingredients:
- 9 large marshmallows
- 1 cup sugar
- 1 tsp cinnamon
- 4 carrots
- 2 cups water
- 3 tbsp butter
- 1/2 cup brown sugar
- 1/8 tsp nutmeg
- 1/2 tsp salt
- Zest of 1 orange
- 1 cup chopped pecans
- 1 cup soft breadcrumbs or cornflake crumbs
Instructions:

Preheat Oven: Set oven to 375°F (190°C).

Prepare Pan: Grease a 13″ x 9″ pan and set aside.

Prepare Marshmallows: Have 9 large marshmallows ready for use.

Mix Crumb Coating: In a bowl, combine 1 cup soft breadcrumbs, sugar, and cinnamon. Set aside.

Cook Carrots: In a saucepan, cook carrots in water until soft. Drain well and mash.

Add Ingredients to Carrots: To the mashed carrots, add butter, brown sugar, nutmeg, salt, grated orange rind, and chopped pecans. Mix thoroughly.

Form Balls: Scoop a heaping tablespoon of the carrot mixture and press a marshmallow into the center. Cover with the carrot mixture to form a ball.

Coat Balls: Roll each ball in the crumb mixture until coated evenly.

Bake: Place the coated balls in the greased baking pan. Use a toothpick to make a small hole on the top of each ball for the marshmallow and air to escape. Bake for 20-25 minutes or until golden brown.

Cool: Allow the balls to cool for 5 minutes before serving.
