Singapore Turkey Stew

Don’t let the list of ingredients scare you…this goes together quickly and easily (I made it after work, it was on the table in 45 minutes). I found this in Sunset magazine.
Ingredients:
- 1 lb lean ground turkey
- 1/2 tsp Chinese five spice powder
- 1/2 tsp salt
- 1/2 cup all-purpose flour
- 2 cloves garlic, minced
- 1-inch piece fresh ginger, grated
- 1 can (14 oz) coconut milk
- 2 cups chicken broth
- 1 bok choy, chopped
- 1 can (14 oz) Italian tomatoes, diced
- 1 can (8 oz) sliced water chestnuts, drained
- 2 green onions, sliced
- 1 lime, juiced
- 1/4 cup fresh cilantro leaves, chopped

Instructions:

- In a large bowl, mix ground turkey, Chinese five spice powder, chili flakes, and salt.
- Shape the mixture into 1-inch balls.
- Pour flour onto a large plate and roll the meatballs in flour to coat lightly.

- Heat oil in a 4-5 quart nonstick pan over medium-high heat.
- Add the meatballs in a single layer and cook, turning often, until lightly browned all over and barely pink in the center, about 5-7 minutes.
- Using a slotted spoon, transfer the meatballs to a plate.

Prepare the Stew:
- Add minced garlic and grated ginger to the pan and stir until fragrant, about 30 seconds.
- Pour in the coconut milk and chicken broth, then add the cooked meatballs back to the pan.
- Bring the mixture to a simmer.

- Adjust the heat to maintain a simmer.
- Cover and cook until the meatballs are no longer pink in the center, about 5 minutes.

Add Vegetables:
- Stir in chopped bok choy, diced tomatoes, sliced water chestnuts, sliced green onions, and lime juice.
- Cook, stirring often, until the bok choy leaves are wilted and stems are barely tender to bite, about 5 minutes.

- Serve directly from the pan and enjoy!
