5 Add chopped onion, carrot, and celery to the same pot. Sauté until the onion is tender, about 2 minutes.
6 Return the browned turkey parts to the pot.
7 Add enough cold water to cover the mixture by 2 inches.
8 Bring the liquid to a boil. Skim off any foam that rises to the surface.
9 Add parsley, thyme, and peppercorns to the pot.
10 Reduce heat to medium and simmer until the liquid is reduced by half, stirring occasionally, about 2 1/2 hours.
11 Strain the stock into a large bowl. Let it stand for 5 minutes.
12 Spoon off any fat that rises to the top of the stock.
