Ingredients:

1 Whole chicken
1 Onion
2 stalks Celery
1 Lemon
20 Garlic cloves

2 tbsp Fresh parsley
1/2 tsp Salt

Instructions:

  1. Preparation:

  2. Seasoning:

    • In a small bowl, mix together olive oil, dried rosemary, and dried thyme.
  3. Prep the Chicken:

    • Rub the oil and herb mixture all over the outside of the chicken.

    • Place the onion, celery, and lemon inside the cavity of the chicken.

    • Transfer the chicken, breast side up, into a dutch oven.
    • Scatter the garlic cloves around the chicken.
    • Pour the white wine and chicken broth into the dutch oven.
  6. Initial Cooking:

    • Place the dutch oven on the stovetop, cover it, and bring it to a boil.
    • Once boiling, transfer it to the preheated oven and bake, covered, for 25 minutes.
  7. Final Cooking:

    • Increase the oven temperature to 450Β°F (230Β°C).
    • Uncover the chicken and bake for an additional 55-60 minutes, or until the chicken is golden brown and cooked through.
  8. Resting:

    • Remove the chicken and garlic cloves to a platter and cover with foil to keep warm.
  9. Preparing the Broth:

    • Skim as much fat as possible from the liquid in the pot.
    • Squeeze out 6 cloves of garlic into a small bowl, mash them into a paste, then whisk in about 1/4 cup of the cooking liquid.
    • Stir in the fresh parsley and salt.
  10. Serving:

    • Serve the flavorful broth alongside the chicken, and garnish each plate with the remaining cloves of garlic.
