Ingredients:

  • 1 cup dry lentils
  • 1 teaspoon salt
  • 5 cups water
  • 1 can (about 14 oz) diced tomatoes

6 Once the chili is done cooking, turn off the heat and taste for seasoning. Adjust salt and pepper according to your preference.
7 Serve the chili hot, topped with shredded cheese, chopped onion, and a dollop of sour cream, or any other toppings you prefer.
