Instructions:

Prepare Sauce Velouté: - Melt 2 tablespoons of butter in a saucepan.
- Stir in 1/4 cup of flour, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper.
- Gradually pour in 2 cups of chicken broth, stirring continuously with a wire whisk.
- Simmer for 5 minutes, stirring occasionally, until the mixture thickens and becomes smooth.
- Continue to simmer for an additional 15 minutes, stirring occasionally. Set aside.

Prepare Tomato Sauce: - In a separate pan, sauté 3 chopped onions in 1 tablespoon of olive oil for 5 minutes.
- Stir in 4 chopped tomatoes, 1/2 teaspoon of salt, 1/4 teaspoon of pepper, 1 bay leaf, and 1 teaspoon of thyme.
- Simmer for 15 minutes, then discard the bay leaf. Set aside.
