Description:

Warm your soul with this comforting Autumn Gold Peanut Soup, a delightful blend of sweet potatoes, apples, and creamy peanut butter. Bursting with flavors of cinnamon and cumin, this soup is both nutritious and satisfying, perfect for a cozy lunch or snack on a chilly day.

Ingredients:

Quantity Ingredient
1 Onion
1 tsp Ground Cumin
1 Sweet Potato
1 Green Apple
1 cup Chicken Broth
3/4 tsp Cinnamon
1/8 cup Creamy Peanut Butter
1/2 cup Sour Cream
Peanuts (for garnish)
Chives (for garnish)
Thinly Sliced Apples (for garnish)

Instructions:

  1. Heat oil in a large saucepan over medium heat.

  2. Add chopped onion and ground cumin to the pan. Cook, stirring occasionally, until the onion becomes transparent and fragrant.

  3. Add diced sweet potato, chopped apple, chicken broth, apple juice, cinnamon, salt, and pepper to the saucepan.

  4. Cover and bring the mixture to a boil, then reduce the heat to a simmer. Allow it to simmer gently until the sweet potatoes and apples are tender, which should take about 20 minutes.

  5. Stir in the creamy peanut butter until it’s fully melted and incorporated into the soup.

  6. Using a food processor or blender, puree the soup until it reaches a smooth consistency.

  7. Return the pureed soup to the saucepan and heat it through gently.

  8. To serve, ladle the warm soup into bowls.

  9. Garnish each serving with a dollop of sour cream, a sprinkle of chopped peanuts, fresh chives, and thinly sliced apples for an extra burst of flavor and texture.
