Description:
This delightful coffee cake recipe, generously shared by my co-worker, has become a staple at our morning meetings. With its simplicity and wonderful flavor, it’s sure to become a favorite in your home too!
Ingredients:
- 1 box instant vanilla pudding
- 1 box instant butterscotch pudding mix
- 1 cup water
- 1 cup water (yes, two separate cups!)
- 4 eggs
- 1 cup brown sugar
- 1 tablespoon cinnamon
Instructions:

1 | In a large bowl, combine the instant vanilla pudding, instant butterscotch pudding mix, oil, water, and eggs. |
2 | Beat the mixture until smooth and well-combined. |
3 | Pour half of the batter into a greased 9×13 inch pan that has been floured or greased. |
4 | In a separate bowl, mix together the brown sugar and cinnamon. |
5 | Sprinkle half of the sugar-cinnamon mixture evenly over the batter in the pan. |
6 | Carefully spread the remaining batter over the sugar-cinnamon layer. |
7 | Sprinkle the remaining sugar-cinnamon mixture on top of the batter. |
8 | Bake the coffee cake on the bottom rack of your oven at 325 degrees Fahrenheit for 50 minutes, or until a toothpick inserted into the center comes out clean. |
9 | Once baked, remove from the oven and allow to cool slightly before slicing and serving. Enjoy with a hot cup of coffee or tea! |
