Indulge in the tantalizing flavors of this hearty spaghetti sauce with meat and chorizo, a dish packed with savory goodness and a hint of spice, perfect for a cozy family dinner or a gathering with friends.
Ingredients:
- 2 onions
- 1 garlic bulb
- 1 chorizo sausage
- 1 pound ground beef
- 450 ml white wine
- 1/4 cup tomato paste
- 1 can (about 450g) chopped tomatoes
- 1 cup water
- 2 tablespoons dried basil
- 3 tablespoons dried oregano
- 2 tablespoons mixed spice
- 1 cup fresh parsley
- Salt and pepper to taste
Instructions:
-
Prepare Ingredients:
- Peel and chop the onions.
- Peel and mince the garlic.
- Slice the chorizo sausage.
- Measure out the white wine, tomato paste, water, dried herbs, and fresh parsley.
-
Saute Aromatics:
- Heat olive oil in a large pan over medium heat.
- Add the chopped onions and cook for about 5 minutes until softened and translucent.
- Stir in the minced garlic and saute for another 5 minutes, being careful not to let it burn.
-
Cook Chorizo and Meat:
- Add the sliced chorizo to the pan and cook for a couple of minutes until the fat starts to render.
- Crumble the ground beef into the pan and brown it well, taking about 15 minutes to develop rich flavor, as recommended by Evelyn/Athens. Patience here pays off!
-
Deglaze and Add Flavors:
- Drain excess fat from the pan.
- Pour in the white wine and let it cook for a couple of minutes to deglaze the pan.
- Stir in the tomato paste and cook for a few more minutes to deepen the flavors.
-
Simmer the Sauce:
- Add the chopped tomatoes, water, dried basil, dried oregano, mixed spice, and celery salt to the pan.
- Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer uncovered for about 2 hours, stirring occasionally. Ensure that the sauce doesn’t stick to the bottom of the pan and that it maintains the desired consistency.
-
Finish and Serve:
- Just before serving, stir in the fresh parsley to add a burst of color and freshness to the sauce.
- Season with salt and pepper to taste.
- Serve the rich and aromatic spaghetti sauce over your favorite pasta, garnished with a sprinkle of grated Parmesan cheese and a few leaves of fresh basil for an extra touch of flavor.
