Fijian Curried Chicken Recipe

Description:

I developed this recipe after spending two months of holiday time in Fiji. Fell in love with the Indian style of cooking. The Chefs would not give me details as to how they made their recipes, except to tell me, add a little of this and a little of that to suit your taste. This recipe is not overpowering and has a delightful flavor.

Ingredients:

  • 4 fryer chickens
  • 3 – 3 1/2 tbsp extra virgin olive oil
  • 1 tbsp haldi powder
  • 1 tbsp garam masala
  • 1 tbsp curry powder
  • 1/2 tbsp chili powder
  • 4 whole cloves
  • 1 cinnamon stick
  • 1/2 cup coconut cream
  • 4 garlic cloves, chopped
  • 1/2 tbsp grated ginger
  • 1 tsp salt
  • 1/4 tsp ground cardamom
  • 14 oz coconut milk
  • 2 onions, chopped
  • 1 potato, cubed
  • 1 celery rib, chopped
  • 1 carrot, chopped
  • 2 tbsp tapioca starch
  • 1/4 cup cold water

Instructions:

  1. Prepare Ingredients: In a large frying pan, heat extra virgin olive oil over medium heat.
  2. Fry Chicken: Add chicken pieces to the pan and lightly fry on all sides, for about 5 to 8 minutes, until they are lightly browned.
  3. Season Chicken: Add haldi powder, garam masala, curry powder, chili powder, whole cloves, cinnamon stick, grated ginger, chopped garlic cloves, salt, and ground cardamom to the pan. Stir to coat the chicken evenly with the spices.
  4. Add Vegetables: Pour in the coconut cream, then add chopped onions, cubed potatoes, chopped celery, and chopped carrots. Cook covered for about 15 minutes or until the vegetables are cooked through.
  5. Remove Spices: Once cooked, remove the cinnamon stick and whole cloves from the pan and discard them.
  6. Adjust Seasonings: Taste the curry and adjust the seasonings according to your preference.
  7. Thicken Sauce: In a small bowl, mix together tapioca starch and cold water until smooth. While the sauce is still boiling, gradually add the tapioca mixture in small amounts, stirring constantly, until the sauce thickens slightly.
  8. Serve: Serve the Fijian Curried Chicken over cooked rice and enjoy!
