Tender Veal Osso Bucco with Gremolata

Osso Bucco Recipe

Ingredients:

  • 3 tablespoons olive oil
  • All-purpose flour (for dredging)
  • 6 veal shanks
  • 4 tablespoons butter
  • 1 large onion, chopped
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 4 cloves garlic, minced
  • Zest of 1 orange
  • Zest of 1 lemon
  • 1 cup white wine
  • 2 cups chopped tomatoes
  • Salt to taste
  • 1 1/2 teaspoons dried thyme
  • 1 teaspoon dried basil
  • 1 bay leaf
  • 1/4 cup chopped parsley
  • 1/2 teaspoon freshly ground black pepper
  • Gremolata (see below)
  • Cooked risotto, for serving

Gremolata Ingredients:

  • 1/2 cup chopped parsley
  • 2 cloves garlic
  • Zest of 1 orange
  • Zest of 1 lemon

Instructions:

  1. Preheat oven to 350°F (175°C).

  2. Prepare Veal: In a heavy ovenproof Dutch oven, heat olive oil over medium-high heat. Dredge veal shanks in flour, shaking off excess. Brown veal shanks on both sides, about 5 minutes per side. Remove from the Dutch oven and set aside.

  3. Saute Vegetables: Add butter to the Dutch oven. Add chopped onion, carrot, celery, minced garlic, orange zest, and lemon zest. Cook, stirring occasionally, until the vegetables are softened.

  4. Deglaze: Pour in white wine, stirring to deglaze the bottom of the pot. Add chopped tomatoes, salt, dried thyme, dried basil, bay leaf, chopped parsley, and freshly ground black pepper.

  5. Braise: Return the browned veal shanks to the pot. Cover and transfer to the preheated oven. Braise for 1 1/2 hours, or until the veal is tender and falling off the bone.

  6. Blend Sauce: Remove the veal shanks from the pot and keep warm. Pour the sauce from the pot into a blender and puree until smooth.

  7. Prepare Gremolata: In a small bowl, combine chopped parsley, minced garlic, orange zest, and lemon zest.

  8. Serve: Place the braised veal shanks on serving plates. Pour the pureed sauce over the veal. Sprinkle with gremolata. Serve with cooked risotto on the side.
