Mean Chef’s Zuni Rolls With Raspberry Chipotle Sauce Recipe

Description: Mean Chef’s Zuni Rolls with Raspberry Chipotle Sauce is a delightful dish that combines the sweetness of raspberries with the smoky heat of chipotle peppers. This recipe, originally found on Epicurious and adopted by Mean Chef, is simply fabulous. The sauce itself is incredibly versatile and pairs wonderfully with pork tenderloin and roast chicken. It’s especially delightful to make when raspberries are in season, allowing you to stock up on the sauce and freeze it for later use.

Instructions:

  1. Make Chipotle Sauce:

    • In a small saucepan, combine fresh raspberries, frozen unsweetened raspberries, sugar, and chipotle chiles in adobo.
    • Simmer the mixture, stirring occasionally, until the sugar is completely dissolved.
  2. Puree and Strain:

    • Transfer the sauce mixture to a blender or food processor and puree until smooth.
    • Strain the puree through a fine sieve into a bowl to remove any seeds or chunks.
  3. Prepare Zuni Rolls:

    • Finely chop the scallions.
    • Lay out the flour tortillas on a clean work surface.
    • Divide the Havarti cheese, turkey, bacon, and chopped scallions evenly between the tortillas.
  4. Roll and Toast:

    • Drizzle some of the chipotle sauce over the filling on each tortilla.
    • Gently roll up the tortillas, enclosing the filling securely.
    • In a lightly oiled skillet, toast the rolls over moderately high heat, starting with the seam side down.
    • Turn the rolls occasionally until they are golden brown on all sides, approximately 3 minutes.
  5. Serve:

    • Once toasted, diagonally halve the tortillas crosswise.
    • Serve the Zuni rolls with the remaining chipotle sauce on the side for dipping.
    • Alternatively, you can bake the rolls in a 350°F oven until the cheese is melted and the rolls are heated through.

Tips:

  • For a spicier sauce, add more chipotle chiles in adobo to taste.
  • You can customize the filling of the Zuni rolls with your favorite ingredients such as avocado, shredded chicken, or bell peppers.
  • If raspberries are not in season, you can use frozen raspberries for the sauce.
  • These Zuni rolls make for a fantastic appetizer or main course and are sure to impress your guests with their unique flavor combination of sweet and spicy. Enjoy! 🌶️🧀🥓
