Ingredients:

  • 4 mangoes in syrup
  • 2 – 3 tablespoons jerk seasoning
  • 2 tablespoons honey-mustard dressing
  • 12 cups salad greens
  • 16 slices of ripe mango

Instructions:

Step Description
1 In a small bowl or container, combine the honey-mustard dressing and lime peel. Stir well and chill until ready to serve.
2 Sprinkle the chicken breast with jerk seasoning, ensuring it is evenly coated.
3 Heat oil in a large skillet over medium-high heat.
4 Cook the chicken breast for approximately 12 minutes, turning once, or until it is no longer pink and cooked through.
5 Once cooked, thinly slice the chicken breast on the bias.
6 Divide the salad greens among 4 dinner plates, and sprinkle with salt and pepper to taste.
7 Arrange the warm chicken slices and mango slices over the bed of salad greens.
8 Drizzle the prepared honey-mustard dressing over the salad, and serve immediately.
