Ingredients:

  • 1 3/4 cups all-purpose flour
  • 4 cups cream cheese

  • Zest of 1 lemon

  • 4 eggs
  • 1/4 cup heavy cream
  • 1 cup strawberries
  • 2 tablespoons sugar
  • 1/4 cup water
  • Pinch of salt
  • 3/4 tablespoon cornstarch
  • 1 tablespoon unsalted butter
  • 1 tablespoon fresh lemon juice

Instructions:

  1. Prepare the Pastry:

    • In a food processor, combine 1/2 cup sugar and lemon zest for 5 seconds.
    • Add the butter, egg yolk, water, and vanilla. Pulse until the mixture is granular.
    • Add the flour and pulse rapidly until the mixture almost forms a ball.
    • Press the dough into a 1-inch-thick cake, wrap in plastic wrap, and refrigerate for 1 hour.
  2. Preheat the Oven:
