Frozen Broccoli | 1 package |
Instructions:
- In a small sauté pan, melt the margarine and sauté a small onion until it’s soft but not brown. If you’re not using onion, you’ll still need to melt the butter.
- In a large saucepan, melt the Cheese Whiz, then add cream of mushroom soup, sugar, salt, pepper, milk, and onion. Bring the mixture to a simmer.
- Meanwhile, in a medium saucepan, cook the rice as directed on the package. Once cooked, drain and set aside.
- While the rice is cooking, separate the large broccoli florets into bite-sized or smaller pieces. If you’re using stalks, chop them in a food processor.
- Add the broccoli florets and the cooked rice to the cheese mixture, stirring until well combined.
- Pour the mixture into a large pan (a 10x14x2 cake pan works well). Preheat your oven to 350 degrees Fahrenheit.
- Bake the casserole in the preheated oven for 30 minutes or until golden brown on top.
Substitutions:
- Substitute 1 teaspoon of onion powder for 1 small onion.
- Substitute 2 tablespoons of Splenda for 2 tablespoons of sugar to make this dish diabetic-friendly without altering the taste.
