Ingredients:

Ingredient Quantity
Margarine 3/4 cup
Butter 1 cup
Onion 1
Cheese Whiz 3 cups
Sugar 2 tablespoons
Milk 3 cups
Rice 1 cup
Frozen Broccoli 1 package

Instructions:

  1. In a small sauté pan, melt the margarine and sauté a small onion until it’s soft but not brown. If you’re not using onion, you’ll still need to melt the butter.
  2. In a large saucepan, melt the Cheese Whiz, then add cream of mushroom soup, sugar, salt, pepper, milk, and onion. Bring the mixture to a simmer.
  3. Meanwhile, in a medium saucepan, cook the rice as directed on the package. Once cooked, drain and set aside.
  4. While the rice is cooking, separate the large broccoli florets into bite-sized or smaller pieces. If you’re using stalks, chop them in a food processor.
  5. Add the broccoli florets and the cooked rice to the cheese mixture, stirring until well combined.
  6. Pour the mixture into a large pan (a 10x14x2 cake pan works well). Preheat your oven to 350 degrees Fahrenheit.
  7. Bake the casserole in the preheated oven for 30 minutes or until golden brown on top.

Substitutions:

  • Substitute 1 teaspoon of onion powder for 1 small onion.
  • Substitute 2 tablespoons of Splenda for 2 tablespoons of sugar to make this dish diabetic-friendly without altering the taste.
