Ingredients:

  • 1 lb lean ground beef
  • 4 cloves garlic
  • 2 tsp nuoc mam (fish sauce)
  • 2 tsp gingerroot, grated
  • 1/2 cup fresh cilantro, chopped
  • 1/2 tsp sugar
  • Dash of black pepper
  • 1 green onion, finely chopped
  • 25 grape leaves
  • 4 tbsp fish sauce
  • 1/2 cup water
  • 2 tbsp vinegar
  • 2 tsp sugar
  • 3/4 tsp crushed red pepper flakes
  • 2 cloves garlic, minced
  • 3 tbsp gingerroot, shredded
  • 2 tbsp carrots, shredded

Instructions:

  1. Prepare Grape Leaves:

    • Rinse grape leaves in hot water and drain them well.
  2. Prepare Beef Mixture:

    • In a mixing bowl, combine the ground beef with minced garlic, 2 tsp of nuoc mam (fish sauce), grated gingerroot, chopped cilantro, 1/2 tsp of sugar, a dash of black pepper, and finely chopped green onion. Mix thoroughly until well combined.
  3. Roll the Filling:

    • Take a grape leaf and place a generous tablespoonful of the beef mixture onto it. Roll the grape leaf around the filling, folding it envelope-style to enclose the beef mixture securely.
  4. Prepare Dipping Sauce:

    • In another bowl, prepare the dipping sauce by mixing together 4 tbsp of fish sauce, 1/2 cup of water, 2 tbsp of vinegar, 2 tsp of sugar, crushed red pepper flakes, and minced garlic cloves. Stir well to ensure all ingredients are fully incorporated.
    • Add the shredded gingerroot and carrots to the sauce, stirring until evenly distributed.
  5. Grill or Broil:

    • Thread the rolled beef and grape leaf parcels onto skewers. If using wooden skewers, be sure to soak them in water for 20-30 minutes beforehand to prevent burning.
    • Grill the rolls over medium-high heat or broil them, positioning them about 6 inches from the heat source. Cook for 10-12 minutes, or until the beef is cooked through and the grape leaves are slightly charred, turning occasionally for even cooking.
  6. Serve:

    • Once cooked, serve the Thit Bo Cuon La Luop rolls hot off the grill, accompanied by the flavorful dipping sauce for an extra burst of deliciousness.

Enjoy your culinary journey with these Vietnamese Beef in Grape Leaves! 🎉
