Instructions:

Prepare Lentils: Rinse the red and brown lentils in cold water.

Cook Lentils: In a medium-sized saucepan, add the lentils and 2 cups of water. Bring to a boil, then reduce heat, cover, and simmer for 10 minutes.

Prepare Soup Base: In a medium-sized cooking pot, combine the cooked lentils (including the liquid), black beans (including liquid), vegetable broth, chicken broth, chicken bouillon cubes, cubed potatoes, and celery root. Bring to a boil, then reduce heat, cover, and simmer for about 10 minutes.

Saute Onion Mixture: Meanwhile, in a medium-sized frying pan, melt the butter and olive oil together. Add the chopped garlic and onions, and sauté until the onions are translucent, about 5 minutes.

Combine Ingredients: Add the sautéed onion mixture to the soup pot. Stir in the soy sauce, black pepper, chili powder, ground cumin, dried oregano, and 4 cups of water. Bring the mixture to a boil.

Adjust Consistency: If the soup is too thick, add more water as needed. Reduce heat, cover, and simmer for about 10 minutes.

Blend Soup: Remove about one-third of the soup and transfer it to a bowl. Using an electric blender, blend until smooth, then return it to the soup pot.
