Ingredients

For the Pyrizhky Dough:

  • 1 cup sugar
  • 1/4 cup water
  • 1/4 teaspoon powdered ginger
  • 1 package dry yeast
  • 1 cup milk
  • 1/4 cup shortening
  • 2 eggs
  • 1 1/2 teaspoons salt
  • 1/4 cup sugar
  • 4 1/2 – 5 cups all-purpose flour

For the Meat Filling:

  • 1 onion, chopped
  • 1/2 cup butter
  • 1 pound ground beef
  • Salt and pepper to taste
  • 1/4 cup all-purpose flour
  • 1 cup soup stock or water
  • 4 hard-boiled eggs, chopped
  • 1/2 cup chopped parsley

Instructions

For the Pyrizhky Dough:

  1. Dissolve sugar and powdered ginger in lukewarm water, then sprinkle dry yeast over it. Let it stand for 10 minutes.
  2. In a separate bowl, combine hot scalded milk with butter and cool to lukewarm.
  3. Add eggs, salt, sugar, and yeast mixture to the milk mixture.
  4. Gradually mix in enough flour to form a medium-soft dough, similar to bread dough.
  5. Knead the dough on a floured surface until smooth and satiny.
  6. Return the dough to the bowl, cover, and let it rise until doubled in bulk.
  7. Punch down the dough, knead it a few times in the bowl, and let it rise again.

For the Meat Filling:

  1. In a skillet, cook the chopped onion in half of the butter until tender.
  2. Add the remaining butter and ground beef to the skillet, and brown the meat lightly.
  3. Season the meat with salt and pepper, then cover and cook over low heat until done.
  4. Remove the meat from the skillet, leaving the drippings behind.
  5. Stir flour into the drippings, then gradually add soup stock or water, cooking until the sauce thickens and comes to a boil.
  6. Combine the cooked meat with the sauce, then allow to cool.
  7. Mix in the chopped hard-boiled eggs and parsley.

Assembling the Pyrizhky:

  1. Cut off small egg-sized pieces of dough and flatten each into a circle, about 1/4 inch thick.
  2. Place a generous portion of the meat filling in the center of each dough circle.
  3. Bring the edges of the dough together over the filling, pressing firmly to seal.
  4. Shape the filled dough into oblong buns, resembling footballs.
  5. Alternatively, the dough may be rolled out, cut into squares, filled, and sealed.
  6. Place the filled buns on a greased baking sheet, sealed side down, spacing them 1 to 1 1/2 inches apart.
  7. Cover and let the buns rise in a warm place until light and puffy, about 1 hour.
  8. Brush the risen buns with a mixture of beaten egg and water or milk.
  9. Bake in a preheated moderate oven (375°F/190°C) for 30 to 35 minutes, or until golden brown and cooked through.

Indulge in the authentic flavors of Ukrainian cuisine with these homemade Pyrizhky, bursting with hearty meat filling and enveloped in pillowy-soft dough.
