Boiled Beef With Horseradish Sauce

Ingredients

  • 3 lbs beef brisket
  • 2 quarts cold water
  • 2 tsp salt
  • 1 onion
  • 3 whole cloves
  • 4 carrots
  • 3 celery stalks
  • 1 turnip
  • 1 leek
  • 1 bouquet garni
  • 8 peppercorns
  • 2 tbsp horseradish
  • 2 tbsp butter
  • 1 onion, chopped
  • 2 tbsp flour
  • 1 lemon, juiced
  • Salt and pepper to taste
  • 1/2 tsp sugar
  • 4 tbsp heavy cream

Instructions

  1. In a large pot, place the beef brisket and cover with cold water. Sprinkle salt over the beef and water. Allow it to stand for 20 minutes.

  2. After 20 minutes, bring the pot slowly to a boil, skimming any foam that rises to the surface frequently.

  3. Add in the onion (peeled and studded with cloves), carrots, celery, turnip, leek, bouquet garni, and peppercorns to the pot. Cover, lower the heat, and simmer for about 2 1/2 hours or until the meat is very tender and can be easily pierced with a fork.

  4. Once the beef is cooked, carefully remove it from the pot and place it on a serving platter. Cover it to keep warm.

  5. Strain the stock through a fine sieve, pressing all the vegetables to extract their juices. Taste the stock for seasoning and set aside one cup of stock to make the sauce.

  6. Serve the remaining stock as a soup before serving the beef.

  7. To make the sauce, melt the butter in a saucepan over medium heat. Add the chopped onion and sauté until soft.

  8. Stir in the flour and cook until lightly browned.

  9. Gradually add the reserved cup of stock, horseradish, and lemon juice to the saucepan. Season with salt, pepper, and sugar to taste.

  10. Bring the sauce to a boil, stirring constantly, then reduce the heat and simmer for 3 minutes.

  11. Remove the sauce from the heat and stir in the heavy cream.

  12. Serve the boiled beef with boiled potatoes and the horseradish sauce separately.
