A VP at my company “wowed” us with this at a potluck lunch one day…he had to supply 12 copies of the recipe for all of us. Absolutely delicious.

Ingredients:

  • 1 wheel of brie cheese
  • 3-4 apples
  • 1/4 cup raisins
  • 1 tablespoon butter
  • 1/2 cup walnuts
  • 1/4 – 1/2 cup brown sugar
  • 1 sheet of puff pastry (Pepperidge Farm or Gainsborough)
  • 1 egg yolk

Instructions:

  1. Prepare the Filling:

    • Mix together the brown sugar, raisins, chopped apples, chopped walnuts, and butter until well combined.
  2. Wrap the Brie:

    • Roll out the puff pastry on a lightly floured surface to about 1/8 inch thickness.
    • Place the brie wheel in the center of the pastry sheet.
    • Spoon the prepared filling mixture over the top of the brie.
  3. Encase the Brie:

    • Carefully fold the pastry over the brie, sealing it completely.
    • Trim any excess pastry if necessary.
  4. Preheat the Oven:

    • Preheat your oven to 400°F (200°C).
  5. Brush with Egg Wash:

    • In a small bowl, beat the egg yolk.
    • Brush the beaten egg yolk over the pastry-wrapped brie.
  6. Bake:

    • Place the wrapped brie on a baking sheet lined with parchment paper.
    • Bake in the preheated oven for 15 minutes.
  7. Reduce Temperature:

    • After 15 minutes, reduce the oven temperature to 350°F (175°C).
    • Continue baking for an additional 15-20 minutes, or until the pastry is golden brown and crisp.
  8. Serve:

    • Remove the baked brie from the oven and let it cool for a few minutes before serving.
    • Slice and enjoy the oozy, delicious center with crackers, sliced baguette, or fruit.

Variations:

The filling can be changed from apple & raisin to mushroom & garlic or winter pesto for a unique twist on this fabulous baked brie recipe. Experiment with different flavor combinations to suit your taste preferences and seasonal ingredients!
