Ingredients:

  • 1 large onion
  • 1/2 green bell pepper
  • 1/3 red bell pepper
  • 1/3 orange bell pepper

Instructions:

Step Description
1 Heat 1 tablespoon of canola oil in a large cast-iron or ovenproof skillet, ensuring the oil coats the sides of the pan.
2 Saute the onion, peppers, and garlic until tender; then, remove them from the pan.
3 Add the remaining oil to the pan and cook the potatoes over medium heat until lightly browned. Then, add the remaining vegetables and ham and cook for an additional 4-5 minutes.
4 Meanwhile, in a bowl, beat together the whole eggs, egg whites, and pepper.
5 Pour the egg mixture over the vegetables in the skillet. Cover and cook for 8-10 minutes, or until the eggs are almost set.
6 Once the eggs are almost set, place the skillet under the broiler (6 inches from the heat) and cook for an additional 2 minutes, or until the eggs are completely set.
7 Cut the frittata into wedges and serve hot.
