Easy Southwestern Casserole Recipe

Ingredients:

1 lb Lean ground beef
1 cup Chicken broth
2 cups Vegetable broth
1/2 cup All-purpose flour
1 cup Sour cream
1 can Diced green chilies
1 bag Tortilla chips
2 cups Shredded Monterey Jack cheese
1/2 cup Chopped green onion

Instructions:

  1. In a skillet over medium heat, brown the ground beef, breaking it into crumbles as it cooks. Once fully cooked, drain any excess fat.

  2. Stir in the taco seasoning, ensuring it’s evenly distributed throughout the meat.

  3. In a small bowl, whisk together the chicken broth, vegetable broth, and all-purpose flour until well combined.

  4. Pour the broth mixture into the skillet with the meat. Bring the mixture to a boil, stirring occasionally, until it thickens slightly.

  5. Once thickened, reduce the heat to low and stir in the sour cream and diced green chilies. Allow the mixture to simmer gently while you prepare the remaining ingredients.

  6. Preheat your oven to 375°F (190°C). Spray a 13×9 inch baking dish with cooking spray to prevent sticking.

  7. Spread half of the tortilla chips evenly across the bottom of the prepared baking dish.

  8. Top the chips with half of the beef mixture, ensuring an even layer.

  9. Pour half of the sauce over the beef layer, followed by half of the shredded Monterey Jack cheese and half of the chopped green onions.

  10. Repeat the layers, starting with the remaining tortilla chips, followed by the beef mixture, sauce, cheese, and green onions.

  11. Place the assembled casserole in the preheated oven and bake for 20 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.

  12. Once cooked, remove the casserole from the oven and let it stand for 5 minutes before serving.
