French Farmhouse Garlic Chicken Recipe

Vampires beware! Actually, don’t be put off by the large quantity of garlic in this recipe. When the garlic cooks, the flavor mellows out and it isn’t overpowering at all (although you and your significant other may want to be sure you both eat dinner together!) Good served with either mashed potatoes or rice.
Ingredients:
- 4 boneless, skinless chicken breast halves
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 head of garlic, cloves separated and peeled
- 40 ml dry white wine
- 1/2 cup chicken broth
- 1/2 cup chicken broth (additional)
- 1 tablespoon lemon juice
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 4 tablespoons all-purpose flour
- 2 tablespoons dry white wine
Instructions:

Rinse chicken breast halves under cold water and pat them dry with paper towels.

Season both sides of the chicken breast halves with salt and pepper.

In a large skillet or frying pan, heat oil over medium-high heat. Add the seasoned chicken breast halves and whole garlic cloves to the pan.

Cook the chicken until it is just brown on each side, turning once. This should take approximately 3-4 minutes per side.

Slowly pour in the 1/2 cup of white wine (or broth) and the 1/2 cup of chicken broth, along with the lemon juice, dried basil, and dried oregano.

Cover the skillet or pan with a lid and reduce the heat to low. Allow the chicken to simmer for 6 to 8 minutes, or until it is tender and no longer pink in the center.

Once the chicken is cooked through, transfer it along with the cooked garlic cloves to a warm serving platter. Keep it warm while you prepare the sauce.

In a small bowl, combine the all-purpose flour with the remaining 2 tablespoons of white wine, stirring until it forms a smooth paste.

Gradually stir in a couple of tablespoons of the hot pan juices from the skillet into the flour mixture to temper it.

Pour the flour mixture into the skillet with the remaining pan juices, stirring constantly to prevent lumps from forming.

Bring the sauce to a boil, then reduce the heat and let it simmer for 1 minute, stirring constantly, until it thickens.

Spoon the sauce over the chicken and serve immediately.
