Instructions:

  1. Begin by making the zabaglione. In the top of a double boiler, beat the egg yolks and 120g sugar until they turn an ivory color.

  2. Whisk the mixture gently over simmering water until it thickens. Once thickened, allow it to cool.

  3. While the zabaglione cools, prepare the orange zest by cooking it with the juice until the zest is soft and the juice thickens.

  4. Mix the orange zest and juice into the zabaglione.

  5. Soften the gelatin in cold water, then add it to the zabaglione mixture.

  6. In a separate bowl, blend the mascarpone cheese with the zabaglione mixture.

  7. Slowly add the cream to the mascarpone and zabaglione mixture, blending until smooth.

  8. Next, prepare the coffee mixture by combining the espresso coffee, remaining sugar, and Amaretto. Allow it to cool.

  9. Dip the ladyfingers into the coffee mixture, ensuring they are soaked but not overly saturated.

  10. Arrange a single layer of soaked ladyfingers in the bottom of a 9-inch bowl.

  11. Cover the ladyfingers with half of the zabaglione mixture.

  12. Repeat the layers, finishing with a layer of zabaglione on top.

  13. Refrigerate the tiramisu for several hours to allow the flavors to meld and the dessert to set.

  14. Once chilled, serve and enjoy this delectable Tiramisu with Orange Zest, savoring each bite of its creamy, citrus-infused goodness.

This recipe combines the rich flavors of mascarpone and espresso with the vibrant essence of orange, creating a dessert experience that is both indulgent and refreshing. Whether served as the perfect ending to a dinner party or enjoyed as a special treat, this Tiramisu with Orange Zest is sure to impress with its harmonious blend of textures and flavors.
