Ingredients:

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 1 can kidney beans, drained and rinsed

  • 1 tsp dried basil (or 1 tbsp fresh basil, chopped)
  • 8 cups water

Instructions:

  1. Brown the Ground Beef:

    • In a Dutch oven or heavy stock pot, brown the ground beef over medium-high heat. Season with salt and pepper to taste.
  2. Saute Onions and Green Pepper:

    • Add the chopped onion and green pepper to the pot with the browned beef. Saute for 5 to 10 minutes until the vegetables are softened.
  3. Add Beans and Tomatoes:

    • Stir in the kidney beans (drained and rinsed) and diced tomatoes.
  4. Season and Simmer:

    • Add the dried parsley, dried basil (or fresh if using), and 8 cups of water to the pot. Bring the mixture to a boil.
  5. Add Pasta:

    • Once boiling, add the pasta to the pot. Reduce the heat to medium-low and simmer for 10 to 20 minutes, or until the pasta is cooked through and tender.
