Ingredients:

  • 2 large sweet potatoes
  • 3/4 cup sugar
  • 2 cans sweetened condensed milk
  • 2 cups milk
  • 10 eggs
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground cloves
  • 1 teaspoon vanilla extract

Instructions:

  1. Pierce the sweet potatoes several times with a fork and place them on a baking sheet.
  2. Bake the sweet potatoes at 375°F for about 1 hour or until they are tender. Let them cool until they are comfortable to touch.
  3. Peel the sweet potatoes and mash them. Set aside 1 cup of mashed sweet potatoes, reserving any remaining for another use.
  4. Sprinkle sugar evenly in a 10-inch round cake pan. Place the pan over medium heat and cook, shaking it constantly, until the sugar melts and turns a light golden brown.
  5. Remove the pan from heat and set it aside. (Note: The melted sugar may crack slightly as it cools).
  6. In a blender, combine half of the mashed sweet potatoes, 1 can of sweetened condensed milk, and half of the ground cinnamon, allspice, cloves, and vanilla extract. Blend until smooth, scraping down the sides as needed.
  7. Pour the mixture into a large bowl. Repeat the blending process with the remaining half of the ingredients and add it to the bowl. Stir well with a wire whisk to combine.
  8. Pour the mixture over the caramelized sugar in the cake pan. Cover the pan with aluminum foil and place it in a larger shallow pan.
  9. Add hot water to the larger pan to a depth of about 1/2 inch.
  10. Bake the flan at 325°F for 1 hour and 15 minutes, or until a knife inserted in the center comes out clean.
  11. Remove the cake pan from the water bath and uncover it. Let the flan cool in the pan on a wire rack for 30 minutes.
  12. Refrigerate the flan for at least 8 hours or overnight to allow it to set.
