Instructions

  1. Preheat Oven: Preheat your oven to 300°F (150°C).

  2. Prepare Pastry:

    • Separate the eggs, saving half of a yolk for the filling.
    • In a mixing bowl, whip the egg whites with cream of tartar until they form stiff peaks.
  3. Mix Yolk Mixture:

    • In another bowl, combine the egg yolks, cinnamon, ricotta cheese, and 1/4 – 2 1/2 tsp of sugar substitute (adjust to taste) until smooth.
  4. Combine Mixtures:

    • Gently fold the yolk mixture into the beaten egg whites until thoroughly combined. Be careful not to deflate the egg whites completely.
  5. Shape and Arrange:

    • Spoon the mixture into 6 mounds onto a buttered or oiled cookie sheet. Create an indentation (about an inch across) in the top of each roll to hold the filling.
  6. Prepare Filling:

    • Microwave the cream cheese until softened to a smooth consistency.
    • Add the remaining sugar substitute (1/2 cup), vanilla extract, and the reserved half yolk. Stir until the filling is smooth and well combined.
  7. Fill Pastries:

    • Spoon the prepared filling into the indentations of the pastry rolls, distributing evenly.
  8. Bake:

    • Place the cookie sheet in the preheated oven and bake for 30-40 minutes, or until the danishes are golden and set.
  9. Cool and Store:

    • Once baked, allow the danishes to cool slightly on a wire rack. Store them covered in the refrigerator after they have completely cooled.
