Ingredients

  • 1 clove garlic, minced
  • 1 tsp sugar
  • 2 tbsp rice vinegar

  • 3 oz chicken, sliced
  • 3-4 Thai basil leaves
  • 1/4 cup tomatoes, diced

Instructions

  1. Prepare Ingredients:

    • In a small bowl, combine sugar and black pepper.
    • In another bowl, mix fish sauce and rice vinegar.
  2. Heat Wok:

    • Heat a wok over high heat. Add 2 tablespoons of oil and heat until the oil is shimmering.
  3. Stir Fry Garlic:

    • Add minced garlic to the hot oil and stir fry for about 30 seconds, until golden brown.
  4. Add Chilies:

    • Add the chili peppers to the wok and stir fry for another 30 seconds.
  5. Cook Meat:

    • Add either the ground pork or sliced chicken to the wok. Stir fry for 3-5 minutes until the meat is browned and fully cooked.
  6. Combine Sauces:

    • Toss in the sugar and black pepper mixture, then pour in the fish sauce and rice vinegar mixture. Stir fry until the sauce starts to bubble and thicken slightly, approximately 1 minute.
  7. Add Noodles:

    • Add the rice noodles to the wok. Gently fold and stir continuously for 3-5 minutes, allowing the noodles to soften and absorb the flavors of the sauce. Add more oil if necessary to prevent sticking.
  8. Add Basil:

    • Add most of the Thai basil leaves (reserving some for garnish) to the wok. Toss gently until the basil begins to wilt.
  9. Incorporate Tomatoes:

    • Add the diced tomatoes to the wok. Turn once to mix with the noodles and other ingredients.
  10. Finish and Serve:

    • Transfer the Pad Kee Mow to a serving platter. Garnish with the remaining Thai basil leaves.
