Instructions:

  1. Soak the Beans: Begin by soaking the white beans in water overnight to soften them.

  2. Prepare the Aromatics: The next day, drain the soaked beans. In a large Dutch oven, melt butter over medium heat. Add chopped onion, celery, sage, and thyme. Sweat the vegetables, cooking them slowly to release their moisture and flavor, until they become translucent.

  3. Combine Ingredients: Add the drained beans to the Dutch oven. Stir in fennel seeds, coriander seeds, red wine, honey, molasses, tomato paste, and chicken stock. Pour in enough water to cover the beans completely.

  6. Finish and Season: After 6 hours or when the beans are tender and fully cooked, remove the Dutch oven from the oven. Stir in cider vinegar, salt, and black pepper to taste.
