Earl Grey Applesauce Recipe
Description:
I received an advanced copy of the new cookbook, “Desserts That Have Killed Better Men Than Me,” which inspired me to host a dessert slumber party with my girlfriends last weekend. We indulged in wine, facials, movies, and tried out various desserts from the book. This Earl Grey Applesauce was one of my personal favorites, especially since I have a penchant for anything apple. Don’t let the prunes deter you—they add a rich, plum flavor to the sauce, making it perfect with a scoop of vanilla ice cream.

1 | Pour 1/3 cup boiling water over the Earl Grey tea bag in a small cup. Let it steep for 10 minutes. |
2 | Meanwhile, prepare the apples by peeling, coring, and wedging them. |
3 | In a medium saucepan, combine the prepared apples and the steeped Earl Grey tea, discarding the tea bag. |
4 | Split the vanilla bean pod and scrape out the seeds. Add both the seeds and the bean pod to the saucepan with the apples. |
5 | Cover the saucepan and simmer over medium heat for about 10 minutes, stirring occasionally. |
6 | Add the chopped prunes and lemon zest to the saucepan. Continue to cook at a moderate simmer for another 10 to 20 minutes, stirring occasionally. |
7 | Remove the saucepan from heat when the apples are soft and starting to break up, suitable for mashing. Remove the vanilla bean pod. |
8 | Mash the cooked apples to your desired consistency using a potato masher. |
9 | Stir in the sugar, clove, and fresh lemon juice (if using), mixing until the sugar is completely dissolved. |
