Ingredients:

  • 1 tsp dried thyme
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 1/2 lbs lean beef chuck, cut into chunks
  • 2 cans condensed beef broth (10.5 oz each)
  • 1 cup Burgundy wine
  • 1 cup dry red wine
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 1/2 lb fresh mushrooms, sliced
  • 1/4 cup water
  • 2 tbsp all-purpose flour

Instructions:

  1. In a large bowl, combine dried thyme, salt, and black pepper.
  2. Add the chunks of beef to the bowl and toss until evenly coated.
  3. In a large pot, heat oil over medium heat.
  4. Add half of the beef to the pot and cook for about 10 minutes, or until browned, stirring occasionally.
  5. Remove the browned beef from the pot and set aside. Repeat with the remaining beef.
  6. Return all the browned beef to the pot.
  7. Stir in the condensed beef broth, Burgundy wine, and minced garlic.
  8. Reduce the heat to low, cover tightly, and simmer for 1 hour, stirring occasionally.
  9. Add the sliced carrots, diced potatoes, sliced mushrooms, and onions to the pot.
  10. Cover and continue to cook for another 1 hour, stirring occasionally to ensure even cooking.
  11. In a small bowl, mix together water and flour until smooth.
  12. Gradually stir the flour mixture into the stew.
  13. Cook, uncovered, for about 10 minutes or until the stew has slightly thickened, stirring occasionally.
