Ingredients:

  • 1/4 kg chicken bones
  • 1 small packet vermicelli noodles
  • 5 cloves garlic
  • 3 shallots
  • 7 bird’s eye chilies
  • 1 stalk spring onion
  • 2 stalks celery
  • 1 1/2 tbsp ground pepper
  • 2 tbsp chili sauce
  • 3 tbsp sweet soy sauce (kecap manis)
  • Sugar and salt to taste
  • Cooking oil for sautéing

Instructions:

  1. Clean and boil the chicken bones for about 10 minutes. Drain and set aside.

  2. Boil the vermicelli noodles until partially cooked. Drain and set aside.

  3. Blend together the shallots, garlic, and bird’s eye chilies until smooth.

  4. Sauté the blended mixture with sliced celery and spring onion until fragrant. Add ground pepper, sugar, and salt.

  5. Add the chicken bones and cook until the seasoning is absorbed.

  6. Mix in the noodles, chili sauce, and sweet soy sauce. Sauté until well combined. Adjust sugar and salt if needed.
