Instructions

  1. Preheat the oven to 425°F (220°C).

  2. Prepare a large baking sheet by covering it with aluminum foil to ease cleanup later.

  3. Combine the quartered potatoes and diced acorn squash in a large bowl.

  4. Add the extra virgin olive oil, chopped rosemary, thyme leaves, chopped oregano, minced garlic, salt, and pepper to the bowl. Toss well to coat the vegetables evenly with the seasonings and oil.

  5. Transfer the seasoned vegetables onto the prepared baking sheet, spreading them out in a single layer. Make sure to pour any leftover oil and herbs from the bowl onto the vegetables.

  6. Roast in the preheated oven for 45 to 55 minutes, turning the vegetables every 15 minutes with a long-handled spoon. This helps them cook evenly and develop a nice caramelization.

  7. Check for doneness – the vegetables should be tender on the inside and golden brown and caramelized on the outside.

  8. Adjust seasoning with more salt and pepper if needed.

  9. Serve immediately while hot and enjoy the delicious flavors of the garlic and herb roasted potatoes and squash!

This recipe is perfect for various occasions, from holiday dinners like Christmas or Thanksgiving to everyday family meals. The combination of fresh herbs and garlic enhances the natural sweetness of the squash and potatoes, making them a favorite among both kids and adults alike.
